Greens and Fruit Salad with Lemon Poppyseed Dressing

The Sun is Shining!

Looks like the groundhogs have been right so far, what beautiful weather! I love the first feelings of spring. The beautiful sunshine, the fresh, crispness to the air. I can’t wait till we can head outside on a regular basis and not take 10 minutes getting properly dressed.

To celebrate the beautiful weather, I made a salad yesterday that makes me think of spring. I have noticed the produce is starting to get better, and we are enjoying the fresh variety of fruits and vegetables.

First off, this dressing is so yummy and can be used on any variety of salads. It’s so nice to quickly make up your own instead of always buying bottled store dressings. Plus, it’s with ingredients you almost always have in the house (minus the poppy seeds I guess :)) The salad can really be any combination of greens, fruit, and nuts you have in the house.

This is a HUGE salad. If you are just serving a small group of 4, I would definitely half the dressing and lettuce amounts. I really like lots of fruit, so I kept those amounts the same.

Greens and Fruit Salad with Lemon Poppyseed Dressing
1/2 cup white sugar
1/2 cup lemon juice
2 teaspoons diced onion
1 teaspoon Dijon-style prepared mustard
1/2 teaspoon salt
2/3 cup vegetable oil
1 tablespoon poppy seeds
1 head romaine lettuce, torn into bite-size pieces
1 cup cashews (or pecans or almonds or omit – use whatever you have in the house!)
1/4 cup dried cranberries
1 apple – peeled, cored and diced
1 pear – peeled, cored and sliced (I used strawberries instead as I didn’t have any pears! It was delish. Next time I might try raspberries, or maybe blueberries)

  1. In a blender or food processor, combine sugar, lemon juice, onion, mustard, and salt. Process until well blended. With machine still running, add oil in a slow, steady stream until mixture is thick and smooth. Add poppy seeds, and process just a few seconds more to mix.
  2. In a large serving bowl, toss together the romaine lettuce, shredded Swiss cheese, cashews, dried cranberries, apple, and pear. Pour dressing over salad just before serving, and toss to coat.
